Homemade Chicken Noodle Soup Recipe (or Chicken & Dumplings)

Last night I was making Chicken Noodle soup and thought I'd post the pics and recipes.  Part of the mission of Spot My Eye is to teach others how to use coupons to save, but also to go "beyond coupons" and learn to think outside the box and be creative with what's on sale and what's in our stockpile.  I thought this recipe would be a good one to use as an example of that.



First, I started with a whole cooked chicken that I found marked down.  Next, I shredded the meat and divided it in half.  I used half for this recipe and half for another recipe.  I put the half for this recipe in my stock pot.



Next, I added celery that I had previously chopped and froze (I found it on sale several weeks ago so I stocked up in order to use it in future recipes.  See how that works!)  Then, I added chopped carrots and onion.


Since i didn't have any chicken broth I added 2 bouillon cubes to the pot.  I also had some homemade cream of chicken soup frozen and added it to the pot as well just to flavor it and thicken it up some.


 Everything went into the pot and simmered for about 45 min.  After that was simmered I made homemade noodles (or dumplings).  I remember making these strip noodles with my Grandma one time when I was a little girl.  :)
To make the noodles mix the ingredients, roll out and then cut into strips using your pizza cutter.



The last thing is to drop the noodles into the simmering soup and cook until done!
Put into individual bowls and top with shredded cheese!  Yummmmm!!!  A filling, frugal meal that the entire family will love!

Here's the exact recipe...

Chicken Noodle Soup w/Homemade Noodles:

2 Cups cooked shredded chicken
3/4 C. chopped celery
1/2 C. chopped/diced onion
3/4 C. chopped carrot
2 chicken bouillon cubes
1 C. Homemade cream of chicken soup

Put all ingredients into a pot and cover with water.  Simmer on low for 45 min. to an hour until vegetables are tender and all the flavors come together.

While the soup is simmering make the noodles...

Homemade Noodles (dumplings):

Take one cup of the broth from the soup and put in a large glass bowl.  Whisk in 1 tsp. baking power and 1 egg.  Slowly add flour (can use whole wheat flour too if you'd like) until a dough forms.  This was about 2 C. of flour for me.  

Roll out dough on a floured surface and cut into strips.  I like wide noodles, but you can make them smaller if you wish.
Drop the noodles into the simmer soup and cook until done.

  1. Mmm! That looks really good. Post more recipes for stockpile cooking, please! Maybe I'm just not creative enough, but I can't seem to find recipes that fit what I already have without having to buy extra ingredients to make it work.
